Shelly,
Egyptian cotton is made from two varieties of cotton plants, originally from America. It has the longest staple length of any cotton so it has higher strength than other variety cotton yarns of the same diameter. That allows smaller diameter cotton yarns to be used in sheeting resulting in a smoother feel. Well Made Egyptian cotton sheets not only feel smoother but last much longer than Pima - AKA Supima - cotton or sheets which just say 100% cotton (those are made from American Upland cotton). The reason the cotton is called Egyptian cotton is because that's where most of it is grown as that country has the ideal climate for it.
